Ingredients

  • one 9-inch baked pastry shell
  • one 1-ounce square unsweetened chocolate
  • one 14-ounce can sweetened condensed milk
  • half teaspoon vanilla
  • one 8-ounce package cream cheese, softened
  • three tablespoons white creme de menthe
  • red food coloring, optional

Instructions

  1. In a small saucepan, melt the unsweetened chocolate with 1/2 cup of sweetened condensed milk; stir in vanilla.
  2. Spread the chocolate mixture on the bottom of the baked pastry shell.
  3. In a large mixer bowl, beat the softened cream cheese until fluffy.
  4. Gradually beat in the remaining sweetened condensed milk.
  5. Stir in the white creme de menthe and red food coloring, if desired.
  6. Fold in the Cool Whip.
  7. Pour the filling into the pastry shell.
  8. Chill for 4 hours or until set.
