Ingredients

  • 1 quart peppers
  • 1/2 cup Crisco oil
  • oregano, to taste
  • garlic salt, to taste
  • salt and pepper, to taste
  • 3 cloves garlic, to taste

Instructions

  1. Let most peppers turn red in the garden, green peppers can be used too.
  2. Pick peppers and place them on the grill.
  3. Cook until the peppers are done and charred as desired.
  4. Remove peppers from the grill.
  5. Place the peppers in a roaster with a lid to keep warm.
  6. Allow the peppers to cool.
  7. Peel off the skins and split each pepper into 3 or 4 slices.
  8. Pack the sliced peppers into canning jars.
  9. No water is added; the peppers make their own juice.
  10. Cold pack the jars in a roaster filled with water so that the water covers the jars.
  11. Cook for about 15 minutes once the water and peppers start boiling.
  12. Rinse the peppers and strain them, checking for skins.
  13. Mix the roasted pepper mixture over the prepared peppers.
  14. Stir, taste, and store in the fridge.
