Ingredients

  • 2 c. rhubarb, cut up in cubes
  • 1 c. sugar
  • 3 Tbsp. flour
  • 1/4 to 1/2 tsp. red food coloring
  • 1 egg
  • 2 Tbsp. water

Instructions

  1. Put the cubed rhubarb in the unbaked pie crust in a 9-inch pie pan.
  2. Mix flour, sugar, water, food coloring, and egg well in a saucepan.
  3. Pour the mixture over the rhubarb in the crust.
  4. Add the top crust to cover the filling.
  5. Bake at 425°F for 10 minutes.
  6. Reduce the oven temperature to 350°F and bake for an additional 40 minutes until the crust is well browned.
