Ingredients

  • 2 large potatoes
  • 1 large tomato
  • 1 small onion
  • 1 large pepper
  • 1/2 tsp. paprika
  • 1 tsp. parsley
  • 3 Tbsp. olive oil
  • 1 1/3 c. bread crumbs
  • 1/4 tsp. pepper
  • 1 tsp. parsley

Instructions

  1. Grease 8 x 8 x 2-inch pan and preheat oven to 350°.
  2. Peel and slice the potatoes.
  3. Dice onions.
  4. Slice tomatoes and slice pepper in long strips.
