Ingredients

  • 8 small new potatoes
  • 10 oz frozen pearl onions
  • 1/2 lb green beans
  • 1/3 cup pesto
  • 1/2 teaspoon salt

Instructions

  1. Cut each potato into 8 wedges.
  2. In a large saucepan, cover potatoes with salted water and bring to a boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Add frozen pearl onions and green beans; cook until tender, about 5 minutes.
  5. Drain the vegetables and place in a bowl.
  6. Add pesto, salt, and pepper; toss to coat evenly.
