Pfeuserli are Swiss pancake dabs, crispy and golden, perfect as a snack or with fall vegetables, offering a light, airy texture and subtle buttery flavor.

Ingredients

  • 1 oz. butter
  • 1 gill warm milk
  • 3 to 4 spoonfuls flour, sifted
  • 2 to 3 egg whites, stiffly beaten

Instructions

  1. Melt butter in warm milk and stir in sifted flour to make batter.
  2. Fold in the stiffly beaten egg whites.
  3. Fry in walnut-size pieces in very hot oil until golden and crisp.
  4. Serve hot, ideally with fall vegetables.
