A spicy, cheesy potato pie featuring hash browns, Monterey Jack, and picante sauce, perfect for a flavorful breakfast or casual dinner for 4 to 6 people.

Ingredients

  • 12 oz. frozen hash browns, thawed
  • 5 eggs, beaten
  • 2/3 cup Pace picante sauce
  • 4 oz. Monterey Jack cheese, shredded
  • 2 oz. sharp Cheddar cheese, shredded
  • 2 green onion tops, sliced

Instructions

  1. Combine all ingredients except bacon in a bowl.
  2. Mix well.
  3. Pour the mixture into a lightly greased 9-inch pie pan.
  4. Bake at 350°F (175°C) for 25 to 30 minutes until golden brown.
  5. Remove from oven and sprinkle with bacon.
  6. Bake for an additional 5 minutes.
  7. Serve with picante sauce.
