Ingredients

  • 3 chicken breasts, skinless and boneless
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 2 (14 oz.) cans chicken broth
  • 1 can diced whole tomatoes
  • 1 green pepper, diced
  • 3/4 c. picante sauce
  • 1 Tbsp. dried basil, crushed
  • 1/2 Tbsp. dried oregano, crushed
  • 2 c. uncooked rotini pasta

Instructions

  1. Cook chicken, onion, garlic, and olive oil in a saucepan over medium heat until the chicken is no longer pink, about 5 minutes.
  2. Add chicken broth, diced tomatoes, green pepper, picante sauce, basil, and oregano to the saucepan.
  3. Bring the mixture to a boil, then reduce heat and simmer for about 12 minutes.
  4. Cook uncooked rotini pasta separately until al dente.
  5. Add cooked pasta to the soup when ready to serve, and enjoy.
