Picante Soup
A flavorful and hearty Mexican-inspired soup featuring tender chicken, diced tomatoes, green peppers, and a spicy picante kick, perfect for comforting gatherings or weeknight dinners.
Ingredients
- 3 chicken breasts, skinless and boneless ⓘ
- 1 large onion, chopped ⓘ
- 3 cloves garlic, minced ⓘ
- 1 Tbsp. olive oil
- 2 (14 oz.) cans chicken broth
- 1 can diced whole tomatoes ⓘ
- 1 green pepper, diced ⓘ
- 3/4 c. picante sauce ⓘ
- 1 Tbsp. dried basil, crushed ⓘ
- 1/2 Tbsp. dried oregano, crushed ⓘ
- 2 c. uncooked rotini pasta ⓘ
Instructions
- Cook chicken, onion, garlic, and olive oil in a saucepan over medium heat until the chicken is no longer pink, about 5 minutes.
- Add chicken broth, diced tomatoes, green pepper, picante sauce, basil, and oregano to the saucepan.
- Bring the mixture to a boil, then reduce heat and simmer for about 12 minutes.
- Cook uncooked rotini pasta separately until al dente.
- Add cooked pasta to the soup when ready to serve, and enjoy.
