Ingredients

  • 3 c. white vinegar
  • 1 c. water
  • 3 tsp. pickling spice
  • 3/4 c. white sugar

Instructions

  1. Simmer the mixture of vinegar, water, pickling spice, and sugar for 30 minutes.
  2. Remove excess fat from the deer heart and cube it into 1/2-inch pieces.
  3. Boil the cubed heart in the pickling solution for 2 hours.
  4. Heat the pickling solution with the meat for 5 minutes over medium heat.
  5. Drain the meat and add it to the pickling solution, then refrigerate.
  6. Let it sit for at least 24 hours before serving.
