Ingredients

  • 3 lb. small fresh button mushrooms
  • 2 large cloves garlic, chopped
  • 2 onions, chopped very fine
  • 25 crushed peppercorns
  • 2 tsp. dried thyme
  • 3 lemons, juice and rind
  • 6 c. white wine
  • 2 c. cider vinegar
  • 4 bay leaves
  • 2 tsp. salt
  • 1/2 c. snipped parsley
  • 1 c. olive oil

Instructions

  1. Cover the mushrooms with water containing 3 tablespoons of salt. Soak for 10 minutes; drain.
  2. Cover the mushrooms with the marinade containing all other ingredients.
  3. Heat to boiling, then turn down the heat and simmer for 10 minutes.
  4. Discard the lemon rinds and chill.
