Tangy, sweet, and slightly spicy pickled cucumbers with onion and horseradish, perfect for snacking or as a zesty condiment to elevate sandwiches and salads.

Ingredients

  • 1 quart kosher pickles
  • 1 1/4 cups sugar
  • 1 medium onion
  • 1 tablespoon celery seed
  • 2 tablespoons vinegar
  • 1 tablespoon horseradish

Instructions

  1. Drain 1 quart of kosher pickles and cut them in half lengthwise.
  2. Return the pickles to the jar.
  3. Add remaining ingredients: sugar, onion, celery seed, vinegar, and horseradish.
  4. Shake the jar occasionally until all the sugar is dissolved.
  5. Leave the pickles to marinate overnight before eating.
