Ingredients

  • 2 cans red beets
  • 2 cups water
  • 2 cups vinegar
  • 1.5 cups sugar
  • 1 teaspoon salt
  • 24 hard-boiled eggs

Instructions

  1. Combine water, vinegar, sugar, and salt in a saucepan and heat to boiling.
  2. Cool the brine mixture.
  3. Place hard-boiled eggs into a large gallon glass jar.
  4. Pour the red beets and cooled brine over the eggs.
  5. Refrigerate for at least 24 hours before serving.
