Ingredients

  • 1 1/2 c. buttermilk
  • 1/2 tsp. pepper
  • 2 (1 1/2 lb.) fryers, disjointed
  • 1 c. flour
  • 1 1/2 tsp. salt
  • 1 tsp. monosodium glutamate
  • 1 1/2 tsp. paprika
  • shortening

Instructions

  1. Mix buttermilk and 1/4 teaspoon pepper in a large, shallow dish; add chicken.
  2. Cover and marinate for 1 hour, turning occasionally.
  3. Combine flour, salt, remaining pepper, monosodium glutamate, and paprika.
  4. Coat chicken with flour mixture.
  5. Place on waxed paper; let stand for 30 minutes.
