Ingredients

  • 1 lb ground beef
  • 1/4 lb sausage
  • 1 cup chopped onion
  • 1/4 cup uncooked rice
  • salt to taste
  • pepper to taste
  • 1 large cabbage
  • 1 large can sauerkraut
  • 2 ham hocks
  • 1 can tomato soup

Instructions

  1. Brown ground beef, sausage, chopped onion, and uncooked rice in a skillet with salt and pepper.
  2. Set the browned mixture aside.
  3. Core the cabbage and boil until the leaves separate; then trim veins and remove leaves one at a time.
  4. Fill each cabbage leaf with the beef mixture, roll up, and secure with a toothpick.
  5. Rinse sauerkraut to reduce its strong flavor.
  6. Layer 1/2 cup of sauerkraut at the bottom of a deep pan or crock‑pot.
  7. Place ham hocks around the edges and arrange the rolled cabbage leaves in the center.
  8. Cover the cabbage with the remaining sauerkraut.
  9. Pour tomato soup and half a cup of water over everything, ensuring the mixture is well covered.
  10. Cover the pot and simmer slowly for 2 hours.
  11. Serve hot, spooning the rich broth over the cabbage rolls.
