Ingredients

  • 4 cups cooked turkey
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 (10 1/2 oz.) cans turkey gravy
  • 1/4 cup snipped chives
  • 1 to 1 1/2 teaspoons dried thyme
  • 4 cups leftover mashed potatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix cooked turkey, frozen peas, frozen corn, turkey gravy, 2 tablespoons of snipped chives, and dried thyme.
  3. Pour the turkey mixture into a shallow 2 1/2 to 3-quart baking dish.
  4. Warm the leftover mashed potatoes and stir in the remaining chives.
  5. Spread the mashed potatoes over the turkey mixture to cover completely.
  6. Bake at 400°F (200°C) for about 25 minutes, until the turkey mixture is bubbly and the potatoes begin to brown.
