Ingredients

  • 1 c. rice
  • 3 Tbsp. lightly salted butter
  • 3 c. chicken stock
  • 1/2 c. finely chopped onion
  • 1 c. chopped pimiento

Instructions

  2. Stir in chicken stock, chopped onion, and chopped pimiento.
  3. Simmer, covered, for 30 minutes until rice is tender and liquid is absorbed.
