Cauliflower With Roquefort

Ingredients

  • 1 medium head cauliflower
  • 1 qt. water
  • 2 chicken bouillon cubes
  • 1 Tbsp. vinegar
  • 1 c. rice
  • 1 Tbsp. butter
  • 2 Tbsp. flour
  • 6 to 8 oz. Roquefort or Blue cheese
  • 3 egg yolks
  • 1 egg white

Instructions

  1. Wash the cauliflower and remove all outer green leaves and any dark or damaged parts.
  2. Place the cauliflower in water with bouillon cubes and vinegar. Bring to a boil and simmer for 10 minutes.
  3. Shut off the heat and let the cauliflower cool and marinate for another 10 minutes. Remove the cauliflower from the liquor whole.
  4. Cook rice in 2 1/2 cups of the cauliflower liquor, seasoning with about 1/8 teaspoon pepper.
  5. Prepare a roux by melting butter and stirring in flour until smooth.
  6. Add crumbled Roquefort or Blue cheese to the roux and stir until melted and creamy.
  7. In a separate bowl, beat egg yolks and white together, then slowly incorporate into the cheese sauce to thicken.
  8. Serve the cauliflower topped with the cheese sauce and rice on the side.
