Cauliflower With Roquefort

Instructions
- Wash the cauliflower and remove all outer green leaves and any dark or damaged parts.
- Place the cauliflower in water with bouillon cubes and vinegar. Bring to a boil and simmer for 10 minutes.
- Shut off the heat and let the cauliflower cool and marinate for another 10 minutes. Remove the cauliflower from the liquor whole.
- Cook rice in 2 1/2 cups of the cauliflower liquor, seasoning with about 1/8 teaspoon pepper.
- Prepare a roux by melting butter and stirring in flour until smooth.
- Add crumbled Roquefort or Blue cheese to the roux and stir until melted and creamy.
- In a separate bowl, beat egg yolks and white together, then slowly incorporate into the cheese sauce to thicken.
- Serve the cauliflower topped with the cheese sauce and rice on the side.
