Creamy, tropical Pina Colada Wedges combine pineapple, coconut, rum, and whipped cream for a delightful frozen treat perfect for summer gatherings and dessert lovers alike.

Ingredients

  • 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • 2 Tbsp. rum or rum extract
  • 3 1/2 cups thawed Cool Whip
  • 8 1/4 oz. can crushed pineapple in syrup

Instructions

  1. Beat the cream cheese with sugar and rum until smooth.
  2. Fold in 2 cups of Cool Whip, crushed pineapple, and 2 cups of coconut.
  3. Spread the mixture into an 8-inch layer pan lined with plastic wrap.
  4. Invert the pan onto a serving plate.
  5. Remove the pan and plastic wrap.
  6. Spread with the remaining Cool Whip and sprinkle with coconut.
  7. Freeze until firm, about 2 hours.
  8. Cut into wedges and garnish with pineapple and cherries.
