Ingredients

  • 2 Tbsp. cornstarch
  • 1 c. pineapple juice
  • 1 c. water
  • 1/2 c. sugar
  • 1 egg, beaten
  • 1 can pineapple chunks, no sugar

Instructions

  1. Mix cornstarch, pineapple juice, enough water to make 1 cup, sugar, and beaten egg in a saucepan.
  2. Bring the mixture to a boil over medium heat, stirring constantly.
  3. Add pineapple chunks and cubed cheddar cheese to the hot mixture.
  4. Allow some of the cheese to melt into the mixture.
  5. Transfer the mixture to a baking dish.
  6. Cover with marshmallows evenly on top.
  7. Bake at 350°F (175°C) for 30 minutes or until heated through and marshmallows are golden.
