Ingredients

  • 1/3 cup rice
  • 2 1/2 cups milk
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 envelopes gelatin
  • 1 pound 4 ounces can crushed pineapple
  • 1/3 cup coconut
  • 1 teaspoon vanilla
  • 1 teaspoon almond flavoring

Instructions

  1. Mix rice, milk, sugar, and salt in a double boiler and cook for 1 hour and 15 minutes.
  2. Sprinkle gelatin over the crushed pineapple and let stand for 15 minutes.
  3. Add the gelatin and pineapple mixture into the cooked rice mixture.
  4. Stir in coconut, vanilla, and almond flavoring.
  5. Refrigerate the mixture for 1 hour.
  6. Fold in Cool Whip and refrigerate overnight.
  7. Serve chilled and enjoy.
