Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 cup cottage cheese
  • 1 chopped onion
  • 1 box frozen chopped broccoli, thawed and drained
  • 1 stick margarine
  • 1 teaspoon salt
  • 4 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, chopped onion, thawed and drained chopped broccoli, melted margarine, salt, and eggs. Mix well.
  3. Add the Jiffy corn muffin mix to the wet ingredients and stir until just combined.
  4. Pour the batter into a greased 13 x 9-inch baking pan.
  5. Bake in the preheated oven for 30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
