Ingredients

  • 20 oz. can pineapple tidbits
  • 1/2 cup packed brown sugar
  • 1/2 cup flaked coconut
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup butter
  • 1 cup plain croutons

Instructions

  1. Drain the pineapple, reserving 1/2 cup of syrup.
  2. Mix the pineapple with brown sugar, flaked coconut, cinnamon, and nutmeg.
  3. Combine the reserved pineapple syrup with melted butter and plain croutons.
  4. Spoon half the crouton mixture into a shallow 1 1/2-quart baking dish.
  5. Cover with half of the pineapple mixture, then add the remaining crouton mixture and pineapple.
  6. Bake in a preheated 375°F oven for 40 minutes.
  7. Serve warm with vanilla ice cream or whipped topping.
