- Crush graham crackers into fine crumbs, reserving 3 tablespoons for topping.
- Combine crumbs and melted margarine; press evenly into an 11 x 7 x 1.5-inch pan or a 9-inch square pan.
- Bake at 350°F (175°C) for 10 minutes, then remove from oven and cool.
- Dissolve lemon gelatin in 1 cup boiling water.
- In a blender, combine cottage cheese, lemon juice, lemon rind, salt, pineapple tidbits, and artificial sweetener; process until smooth.
- Add the cottage cheese mixture to the dissolved gelatin; blend well.
- Chill until the mixture is partially set.
- Pour the mixture into the crust and chill until firm.
- Sprinkle with the reserved graham cracker crumbs.
- Garnish with thin lemon peels before serving.
