Ingredients

  • 11 (2-inch) square graham crackers
  • 1 Tbsp. melted margarine
  • 2 envelopes dietetic lemon gelatin
  • 1 1/2 cups cottage cheese
  • 2 Tbsp. lemon juice
  • grated rind of 1/2 lemon
  • 1/4 tsp. salt
  • 2 (8 1/2 oz.) cans dietetic pineapple tidbits
  • artificial sweetener to equal 1/2 cup sugar

Instructions

  1. Crush graham crackers into fine crumbs, reserving 3 tablespoons for topping.
  2. Combine crumbs and melted margarine; press evenly into an 11 x 7 x 1.5-inch pan or a 9-inch square pan.
  3. Bake at 350°F (175°C) for 10 minutes, then remove from oven and cool.
  4. Dissolve lemon gelatin in 1 cup boiling water.
  5. In a blender, combine cottage cheese, lemon juice, lemon rind, salt, pineapple tidbits, and artificial sweetener; process until smooth.
  6. Add the cottage cheese mixture to the dissolved gelatin; blend well.
  7. Chill until the mixture is partially set.
  8. Pour the mixture into the crust and chill until firm.
  9. Sprinkle with the reserved graham cracker crumbs.
  10. Garnish with thin lemon peels before serving.
