Ingredients

  • 2 Tbsp butter
  • 1/4 tsp cornstarch
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 cups milk
  • 2 egg yolks
  • 1 tsp vanilla
  • 1 small can pineapple

Instructions

  1. Combine butter, cornstarch, sugar, salt, and milk in a saucepan and cook until thickened.
  2. Remove from heat and stir in egg yolks and vanilla until well blended.
  3. Add the small can of pineapple to the custard mixture and mix gently.
  4. Pour the custard into a baked pie shell.
  5. Beat egg whites until stiff peaks form to make meringue.
  6. Spread the meringue over the pineapple custard in the pie shell.
  7. Bake the pie until the meringue is golden brown.
