Ingredients

  • 8 oz Swiss cheese
  • 2 Tbsp flour
  • 1 green onion
  • 2 firm tomatoes
  • 1 tsp chopped basil
  • 2 eggs
  • 2/3 cup milk or cream
  • 1 9-inch pie shell
  • 2 Tbsp butter

Instructions

  1. Grate the Swiss cheese and toss with flour.
  2. Saute the sliced green onion in butter until golden.
  3. Spread approximately half of the cheese over the bottom of the pie shell, then spread the sautéed onion over the cheese.
  4. In the remaining butter in the pan, heat the sliced tomatoes with chopped basil for two minutes.
  5. Arrange the tomato slices over the onion layer, then cover with the remaining cheese.
  6. Beat the eggs with milk or cream and pour the mixture over the cheese in the pie.
  7. Bake at 350°F for 35 to 40 minutes or until the pie is firm and golden.
