Pineapple-Date-Nut Bread(1 Loaf)

- Combine pineapple and dates in small saucepan.
- Cook over low flame, stirring constantly until dark and thick.
- Stir in pecans. Turn off flame.
- Cool 10 minutes. Pour date mixture into bowl. Combine eggs, milk and oil.
- Add to date mixture.
- Stir in sifted dry ingredients, just until moistened. Pour into greased 8 x 4-inch loaf pan.
- Bake in 350° oven 1 hour to 1 hour and 10 minutes.
- Cover during last 15 minutes of baking time.
- Cool completely, remove from pan.
- Let stand overnight for better flavor and easier slicing.
