Pineapple-Date-Nut Bread(1 Loaf)

Ingredients

  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 1/2 c. chopped dates
  • 1 c. chopped pecans
  • 2 eggs
  • 2/3 c. milk
  • 1/4 c. vegetable oil
  • 2 c. flour
  • 1/4 c. light brown sugar, packed
  • 1 Tbsp. baking powder
  • 1 tsp. salt

Instructions

  1. Combine pineapple and dates in small saucepan.
  2. Cook over low flame, stirring constantly until dark and thick.
  3. Stir in pecans. Turn off flame.
  4. Cool 10 minutes. Pour date mixture into bowl. Combine eggs, milk and oil.
  5. Add to date mixture.
  6. Stir in sifted dry ingredients, just until moistened. Pour into greased 8 x 4-inch loaf pan.
  7. Bake in 350° oven 1 hour to 1 hour and 10 minutes.
  8. Cover during last 15 minutes of baking time.
  9. Cool completely, remove from pan.
  10. Let stand overnight for better flavor and easier slicing.
