Ingredients

  • 20 oz. can pineapple chunks in juice
  • 1/3 cup sugar
  • 3 Tbsp. all-purpose flour
  • 1 cup shredded sharp Cheddar cheese
  • 1/2 cup round buttery cracker crumbs
  • 2 Tbsp. butter or margarine

Instructions

  1. Drain pineapple, reserving 3 tablespoons of juice.
  2. Combine the reserved pineapple juice, sugar, and flour in a bowl.
  3. Stir in the pineapple and shredded Cheddar cheese.
  4. Spoon the mixture into a lightly greased, shallow 2-cup baking dish.
  5. Combine cracker crumbs and melted butter; sprinkle evenly over the pineapple mixture.
  6. Bake at 350°F for 25 minutes or until bubbly.
