Pineapple-Lime Upside Down Cake
Ingredients
- 1 medium lime
- 6 tablespoons (3 oz.) unsalted butter ⓘ
- 3/4 cup light brown sugar ⓘ
- 1 fresh pineapple, peeled and cored, cut into 6 (1/4-in.) slices ⓘ
- 1 1/3 cups (about 5 3/4 oz.) all-purpose flour ⓘ
- 1 teaspoon lime zest (from 1 lime) ⓘ
- 1 teaspoon baking powder ⓘ
- 1/4 teaspoon baking soda ⓘ
- 1/4 teaspoon table salt ⓘ
- 2/3 cup light brown sugar ⓘ
- 1/2 cup (4 oz.) unsalted butter, softened ⓘ
- 1 large egg ⓘ
- 1 teaspoon vanilla extract ⓘ
- 2/3 cup sour cream ⓘ
Instructions
- Dollop cake mixture over fruit, and spread evenly to sides of pan. Bake in preheated oven until a skewer inserted in center comes out clean, about 40 minutes. Let cool in pan 10 minutes; invert onto a large cake plate. Let cool 5 minutes before slicing; serve with whipped cream or ice cream.
