Ingredients

  • 2 1/2 cups white flour
  • 1 teaspoon salt
  • 1/2 teaspoon grated lemon peel
  • 1 cup shortening
  • 6 tablespoons pineapple juice
  • 1 can sliced pineapple (15 1/4 oz.)
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 3/4 cup confectioners sugar

Instructions

  1. In a bowl, mix together flour, salt, and grated lemon peel.
  2. Cut in shortening with a pastry blender until mixture resembles coarse crumbs.
  3. Add pineapple juice and mix until a dough forms.
  4. Roll out dough to 1/8-inch thickness on a floured surface.
  5. Cut out rounds 1/2 inch larger than pineapple slices.
  6. Cut 8 rounds and, using a donut cutter, cut 8 more rounds from the dough.
