Pineapple Pecan Bread

- Cream shortening, gradually add sugar, beating well at medium speed of an electric mixer.
- Add egg, beating well.
- Combine flour, baking soda and salt; add to cream mixture, alternating with juice and beating well after each addition.
- Stir in pineapple and pecans.
- Pour batter into greased and floured loaf pan.
- Bake at 350° for 50 to 55 minutes.
- Cool in pan 10 minutes then remove to rack.
- Cool completely.
