Pineapple Rise
A luscious pineapple gelatin dessert with creamy whipped topping and fresh strawberries, perfect for summer gatherings or special occasions requiring a light, fruity treat.

Instructions
- Drain and grind or puree the pineapple.
- Add half of the sugar to the pineapple puree. Remove 1 cup of the puree and sprinkle gelatin over the top to soften.
- Combine egg yolks and the remaining sugar in a double boiler and cook over low heat, stirring until mixture thickens.
- Add the gelatin mixture to the egg yolks and stir until the gelatin dissolves. Cool to lukewarm.
- Add the remaining pineapple puree to the mixture.
- Whip egg whites and salt in a bowl until foamy.
- Fold in the whipped cream.
- Gently fold in the pineapple mixture.
- Pour the mixture into a mold or oblong pan.
- Chill until firm, about 2 hours.
- Garnish with whipped cream and strawberries before serving.
