Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 No. 2 1/2 tin crushed pineapple
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup brown sugar
  • 1 cup chopped nuts
  • 2 pounds peeled and grated carrots
  • 2 or 3 cups raisins
  • 3 cups sugar (half brown and white)
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger

Instructions

  1. When the carrots are almost done, add raisins and sugar, along with cinnamon, allspice, nutmeg, ginger, and some salt.
  2. Cook until the raisins are tender, then cool the mixture.
  3. Add enough flour to make a slightly stiff cake batter, along with baking powder and soda.
  4. Mix in plenty of chopped nuts, preferably walnuts.
  5. Pour the batter into greased and floured loaf pans.
  6. Bake in a slow oven for at least 1 hour until done.
  7. Wrap and freeze surplus portions if desired.
