Ingredients

  • 2 c. butter
  • 3 c. confectioners sugar
  • 4 eggs
  • 1 lb. vanilla wafers, crushed well
  • 2 (1 lb.) cans crushed pineapple, drained
  • 1 pt. heavy cream (I use Cool Whip)
  • 1 c. pecan halves

Instructions

  1. Cream eggs, butter and sugar together.
  2. Line a flat bottomed pan with waxed paper (13 x 13-inch pan).
  3. Take half the wafer crumbs and sprinkle in pan.
  4. Spread with butter/sugar mixture. Add the drained pineapple, then top with a layer of whipped cream or Cool Whip.
  5. Scatter the pecan halves over top and then cover with the rest of wafer crumbs.
  6. Refrigerate overnight.
  7. Cut into squares and serve.
