Pineapple Scallop Kabobs

Ingredients

  • 1/2 c. Pineapple Juice
  • 2 Tbsp. Soy Sauce
  • 1 Tbsp. Lemon Juice
  • 10 oz. fresh Scallops
  • 2 canned Pineapple Rings
  • 1 Red Pepper, cut into 1 inch squares
  • 1 Green Pepper, cut into 1 inch squares
  • 8 Cherry Tomatoes

Instructions

  1. Combine Pineapple Juice, Soy Sauce, Lemon Juice in a large mixing bowl.
  2. Add Scallops and Pineapple Rings; toss to coat. Marinate, covered, in a refrigerator for 1 hour, stirring occasionally.
  3. Preheat broiler.
  4. Remove Scallops and Pineapple Rings from the marinade, discard the marinade.
