Pineapple Seven-Up Cake

Ingredients

  • 1 pkg. cake mix, yellow
  • 1 pkg. instant pudding mix (pineapple)
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 1 bottle seven up
  • 1 1/2 cups sugar
  • 2 tablespoons flour, all-purpose
  • 1/2 cup margarine
  • 2 each egg yolks slightly beaten
  • 1 can pineapple, canned, crushed no not drain
  • 1 cup coconut

Instructions

  1. Mix together cake mix and instant pudding.
  2. Add oil.
  3. Add eggs, beating well after each addition.
  4. Add Seven-Up.
  5. Mix well.
  6. Bake in 9x13-inch greased and floured pan at 350F (180C) for approximately 30 minutes, or until cake pulls away from edge of pan.
  7. Frosting: Mix together sugar and flour.
  8. Add the rest of the frosting ingredients except the coconut and chopped pecans.
  9. Cook on top of stove, or in microwave oven, until thick; then add the coconut and chopped pecans.
  10. Spread on cake.
