Ingredients

  • 20 oz. can unsweetened pineapple chunks
  • 1 c. buttermilk
  • 2 tsp. vanilla
  • 2 tsp. liquid sweetener
  • mint leaves (optional)

Instructions

  1. Drain the pineapple, reserving 1/2 cup of juice.
  2. Freeze the pineapple chunks.
  3. Place the reserved juice, buttermilk, vanilla, sweetener, and frozen pineapple into a blender container.
  4. Blend until smooth.
  5. Pour into glasses and garnish with mint, if desired.
  6. Serve immediately.
