Ingredients

  • 1 Tbsp. butter
  • 1 Tbsp. sugar
  • 1 c. plain flour
  • 1/4 tsp. salt
  • 3 tsp. baking powder
  • 3 eggs, well beaten
  • 1 c. well drained crushed pineapple
  • 1 c. sugar

Instructions

  1. Cream the butter and sugar together.
  2. Add the dry ingredients and mix until crumbly.
  3. Add half of the beaten eggs and mix well.
  4. Spread the mixture in a greased 8 x 8-inch pan.
  5. Spread the crushed pineapple over the batter.
  6. Mix 1 cup sugar, butter, and coconut to prepare the topping.
  7. Add the remaining eggs and mix well.
  8. Spread the coconut topping over the pineapple layer.
  9. Bake at 350°F for 30 to 35 minutes.
  10. Cool and cut into squares.
