Ingredients

  • 1 cup pinto beans
  • 1 teaspoon salt
  • 1 tablespoon canola oil
  • 1 teaspoon sugar or molasses
  • water

Instructions

  1. Pick any foreign objects from the beans.
  2. Wash the beans and place them in a 2 1/2-quart utensil with a cover.
  3. Cover the beans about 1/4 inch above the beans with cold water.
  4. Bring the water to a full boil for approximately 1 minute, then drain off the hot water through a colander.
  5. Cover the beans again with hot water about 1/4 inch above the bean level.
  6. Add salt and canola oil to the beans.
  7. Cook until the beans are tender, stirring occasionally.
  8. Add more hot water if necessary during cooking.
  9. When the beans are tender and well done, add sugar or molasses, preferably molasses.
  10. Add more hot water if soupy beans are desired.
