Ingredients

  • 1 onion, diced
  • 1 carrot, diced
  • 1 turnip, peeled and diced
  • 1 baking potato, peeled and diced
  • 3 Tbsp. olive or corn oil
  • 1 1/2 c. dried yellow split peas
  • 6 c. chicken broth
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 2 tsp. ground cumin
  • 1/2 to 1 tsp. cayenne pepper
  • 1 tsp. dried sage

Instructions

  1. In a medium stock pot, sauté diced onion, carrot, turnip, and peeled potato in oil until vegetables are tender.
  2. Add dried yellow split peas, chicken broth, minced garlic, bay leaf, ground cumin, cayenne pepper, and dried sage to the pot.
  3. Bring the mixture to a boil, then reduce heat and simmer for 2 hours until peas are well cooked and soup becomes a thick puree.
  4. Taste for seasoning and add salt if desired.
  5. Serve hot, and freeze any leftovers if needed.
