Ingredients

  • 1 cup flour
  • 2 sticks butter
  • 1 cup pecans
  • 8 oz cream cheese
  • 16 oz Cool Whip
  • 1 cup powdered sugar
  • 3 cups milk
  • 1 large box pistachio pudding
  • 1 teaspoon vanilla

Instructions

  1. Melt oleo or butter and add flour, then mix in 1/2 cup of pecans.
  2. Pat the mixture into a 9 x 13 inch baking dish.
  3. Bake at 350°F for 15 minutes and let cool.
  4. Prepare the filling by mixing cream cheese, powdered sugar, vanilla, and Cool Whip until smooth.
  5. In a separate bowl, whisk the pistachio pudding with 3 cups of milk until thickened.
  6. Layer the cooled crust with the cream cheese mixture and pistachio pudding.
  7. Top with remaining chopped pecans if desired and refrigerate before serving.
