Ingredients

  • 6 tomatillo
  • 1/2 onion medium sized
  • 1 clove garlic
  • 1 chile cerrano or jalapeno
  • 2 cups water

Instructions

  1. Peel and wash the tomatillo, wash the chile and the coriander, and peel the 1/2 onion and garlic. Combine water, tomatillo, onion, garlic and chile in a medium sized sauce pan.
  2. Boil and reduce to simmer until the tomatillos are tender. While it cooks, chop the coriander coarsely.
  3. Let cool for a moment and blend together with the coriander.
  4. Cool completely and serve room temperature.
