Ingredients

  • 4 cups all-purpose flour
  • .75 oz fresh yeast
  • None Pinch sugar
  • 1/2 tsp salt
  • 4 tbsp olive oil
  • 8.75 oz ricotta cheese
  • 1 clove garlic, peeled and pressed
  • 3.5 oz salami, thinly sliced
  • 7 oz black and green olives, pitted
  • 1 None red onion, peeled and cut into fine rings

Instructions

  1. Sift the flour into a bowl and make a well in the middle. Dissolve the yeast and sugar in 1 cup of lukewarm water and pour it into the well. Gradually stir in the flour from the edge of the bowl, forming a dough. Cover and keep in a warm place about for about 30 mins. Add 1/2 tsp of salt and 2 tbsp of oil to the dough and knead for 5-10 mins until smooth. Form the dough into 4 balls, cover, and keep in a warm place for another 30 minutes.
  2. Mix the ricotta cheese, 2 tbsp of olive oil and the garlic. Preheat the oven to 450°F.
  3. Roll out the dough balls on a floured work surface into circles about 9 inches in diameter. Put the pizzas on 2 baking sheets lined with parchment paper. Spread evenly with the ricotta mixture and evenly distribute the salami, olives and onion. Bake the pizzas one baking sheet at a time for about 13 mins.
