Pizza Primavera

Ingredients

  • basic pizza dough
  • 1 lb. fresh asparagus
  • 1 lb. fresh broccoli florets
  • 12 oz. fresh tiny green or yellow squash, sliced
  • 1 c. shelled fresh peas
  • 1/2 c. extra virgin olive oil
  • 2 c. shredded Mozzarella cheese
  • 2 c. shredded white Cheddar cheese
  • 1 c. sliced cherry tomatoes
  • 6 green onions, chopped
  • fresh ground black or white pepper
  • 1/4 c. freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 500°.
  2. Steam all vegetables (except tomatoes) until barely tender.
  3. Immerse in ice water to stop cooking.
  4. Drain well and reserve.
  5. Shape dough any way you like; brush dough with olive oil.
  6. Top with the shredded cheeses.
  7. Arrange the vegetables and tomatoes on top of the cheeses; sprinkle with the green onions. Season to taste with salt and pepper; drizzle with the remaining olive oil.
  8. Bake at 500° for about 10 minutes, until crust is golden.
  9. Sprinkle with Parmesan and tarragon.
  10. Slice and serve.
