Pizza Primavera
Ingredients
- basic pizza dough
- 1 lb. fresh asparagus ⓘ
- 1 lb. fresh broccoli florets ⓘ
- 12 oz. fresh tiny green or yellow squash, sliced ⓘ
- 1 c. shelled fresh peas ⓘ
- 1/2 c. extra virgin olive oil
- 2 c. shredded Mozzarella cheese
- 2 c. shredded white Cheddar cheese ⓘ
- 1 c. sliced cherry tomatoes ⓘ
- 6 green onions, chopped
- fresh ground black or white pepper ⓘ
- 1/4 c. freshly grated Parmesan cheese ⓘ
Instructions
- Preheat oven to 500°.
- Steam all vegetables (except tomatoes) until barely tender.
- Immerse in ice water to stop cooking.
- Drain well and reserve.
- Shape dough any way you like; brush dough with olive oil.
- Top with the shredded cheeses.
- Arrange the vegetables and tomatoes on top of the cheeses; sprinkle with the green onions. Season to taste with salt and pepper; drizzle with the remaining olive oil.
- Bake at 500° for about 10 minutes, until crust is golden.
- Sprinkle with Parmesan and tarragon.
- Slice and serve.
