Ingredients

  • 3 Tbsp. softened butter or margarine
  • 2 Tbsp. flour
  • 2 Tbsp. sugar
  • 3/4 tsp. salt
  • 3 large eggs
  • 2 c. fresh corn kernels or 1 (10 oz.) pkg. frozen whole kernel corn, thawed and chopped
  • 1 3/4 c. milk

Instructions

  1. Preheat oven to 325°F.
  2. Grease a shallow 1 1/2-quart baking dish.
  3. Combine butter, flour, sugar, and salt in a bowl; mix until smooth.
  4. Stir in eggs.
  5. Stir in corn and milk.
  6. Pour the mixture into the prepared dish.
  7. Place the dish in a larger baking pan and pour boiling water into the larger pan halfway up the sides of the dish.
  8. Bake for 30 minutes; stir the pudding.
  9. Bake for an additional 25 to 30 minutes, or until a knife inserted in the center comes out clean.
  10. Cool for 10 minutes before serving.
