Ingredients

  • 4 underripe Anjou or Bosc pears
  • 1/4 cup orange juice
  • 2 teaspoons grated lemon rind
  • 1/2 cup sugar
  • 2 tablespoons lemon juice
  • 1 slice fresh ginger root or 1/2 teaspoon ground ginger
  • 1/4 cup blanched almonds, split and toasted
  • whipped cream (optional)

Instructions

  1. Peel the pears and cut out the blossom end, keeping the stems intact.
  2. In a deep saucepan, combine sugar, orange juice, lemon juice, lemon rind, and ginger. Bring to a boil.
  3. Place the pears in the syrup, bring to a boil again, then cover and simmer for 25 to 30 minutes or until the pears are tender when pierced with a fork.
  4. Arrange the pears in a deep serving dish and pour the syrup over the top.
  5. Sprinkle the toasted almonds over the pears and serve slightly warm or chilled, optionally with whipped cream.
