Ingredients

  • 1/2 cup dry white wine
  • 2 tablespoons chopped shallots or onion
  • 1 small lime, sliced
  • 1 jalapeno pepper, sliced
  • 1 pound red snapper fillets

Instructions

  1. Stir white wine, lime slices, and jalapeno slices in a 12-inch skillet.
  2. Add red snapper fillets to the skillet.
  3. Add enough water to cover the fillets.
  4. Heat to a simmer over low heat.
  5. Cook the fillets for 8 to 10 minutes or until the fish flakes easily with a fork.
  6. Remove the fillets from the liquid and serve.
