Ingredients

  • 2 lb. Pacific salmon or halibut
  • 2 Tbsp. chopped basil
  • 1 tsp. dried fresh rosemary
  • 1 tsp. fresh parsley
  • 3 Tbsp. butter
  • 3 to 4 Tbsp. fresh lemon juice
  • 1 large lemon

Instructions

  1. Place fish on a large double sheet of heavy foil.
  2. Sprinkle chopped basil, dried rosemary, and fresh parsley over the fish.
  3. Add butter dotted evenly over the fish.
  4. Season with fresh lemon juice, salt, and pepper.
  5. Seal the foil tightly to retain juices.
  6. Bake at 375°F for 25 to 30 minutes, until fish flakes easily with a fork.
  7. Garnish with additional fresh herbs, if desired.
