A hearty Polish-inspired pot roast with tender beef, earthy mushrooms, and tangy dill pickle, perfect for comforting family dinners and special occasions.

Ingredients

  • 3 lb. bottom round roast
  • 1 chopped onion
  • 1 sliced dill pickle
  • 1 1/2 oz. dry mushrooms
  • 6 peppercorns
  • 1 bay leaf
  • 1/4 cup beef bouillon

Instructions

  1. Soak dry mushrooms in water for about 3 hours.
  2. Drain the mushrooms.
  3. In a large pot, brown the bottom round roast on all sides.
  4. Add the soaked mushrooms, chopped onion, sliced dill pickle, peppercorns, bay leaf, and beef bouillon to the pot.
  5. Cook on the stove top for 2 to 3 hours until the beef is tender.
  6. During the last half hour of cooking, add sour cream to the pot.
  7. Mix well to create a creamy sauce.
