Polish Teacakes are delicate, nut-coated butter cookies with a hint of vanilla, perfect for teatime or special occasions, offering a delightful combination of sweetness and crunch.

Ingredients

  • 1/2 cup butter
  • 1 egg yolk
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 cup flour
  • 1/2 teaspoon vanilla

Instructions

  1. Cream butter and sugar until light.
  2. Add egg yolk; mix well.
  3. Add flour and salt; mix.
  4. Roll dough into small balls and dip in unbeaten egg white.
  5. Roll in finely chopped nuts.
  6. Place on a buttered baking sheet and press down the center of each with a thimble.
  7. Bake in a 325°F oven for 5 minutes.
  8. Remove from oven and press down again with the thimble.
  9. Return to oven and bake for about 10 to 15 minutes.
  10. Remove from oven and fill the hot indents with preserves.
