Ingredients

  • 2 c. water
  • 1/2 c. pineapple juice
  • 4 Tbsp. Minute tapioca
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 1/4 c. crushed pineapple
  • 1/2 c. pecans

Instructions

  1. Combine water, pineapple juice, Minute tapioca, sugar, and salt in a saucepan and mix well.
  2. Bring the mixture quickly to a boil over direct heat, stirring constantly.
  3. Remove from heat after boiling to prevent overcooking; the mixture will be thin.
  4. Add crushed pineapple and pecans to the mixture.
  5. Stir occasionally until cooled.
